What is the best way to rip audio from an MKV file?

Demux it using mkvmerge.

Thanks, I've done that.

I now have the .DTS file but would like to edit it using GoldWave but I'm unable to. I need to convert it to wave or MP3. What program would you suggest?

Used to use MeGUI a few years back for converting .dts to .ac3, fairly sure it had an option for .mp3 amongst other things too

Search for a program called Format Factory. It can convert your mkv straight to np3.
