Well at the tender age of 27 I have only just discovered risotto, I've made a leek risotto and a mushroom risotto but expanding next week and making something different. So ocuk, what're your favourite risotto recipes?

The winner will get their recipe cooked and ate by myself, at some point over the next 5 days :p
 
Saffron risotto aka risotto milanese.

Fry a chopped onion gently in butter
Add arborio or carniroli rice and stir until well coated
Add a glass of Noilly-Prat and stir until absorbed
Then keep adding chicken stock until rice cooked
Stir in saffron, parmesan and butter and serve immediately

To die for :)
 
I bought some risotto rice at the weekend so will be doing something this week. I have some mushrooms too. Might just do a simple mushroom one, or I have leeks too. We will have to see.
 
Crab, chilli and lime risotto.

Shredded chicken, saffron and pancetta risotto.

Vanilla and champagne risotto with poached strawberries.
 
Dried mushroom risotto - use the soaking water from the mushrooms as a stock. Makes for a really intense flavour, but of lemon juice, some shelled broad beans and loads of parmesan, you can't go wrong!

I friend made something very similar to this for me a few months back - it was absolutely delicious.
 
As much as I love risotto (and mushrooms!) I can't stand traditional mushroom risotto with dried porcini (etc.) mushrooms. However I do like getting nice chestnut mushrooms and using those instead. I usual dice half of them as finely as possible and fry with butter/garlic/celery/onion at the start. Then cook the rissotto out. Then cut big slices of the other half of mushrooms and griddle them to stir in at the end. A bit of lemon juice and parsley at the end is delicious. Down with porcinis! :p

One recipe I do is smoked haddock (or mackerel) and rocket. Do your standard white risotto (garlic/onion/celery) and mix in the fish and some rocket at the end. Save some rocket as garnish and poach an egg to go on top. Delicious and looks really classy too.

I like the idea of doing a bit of fish on top of a risotto, must find a recipe/combo that works well for that.
