I just fitted some new gatorskins and noticed some holes on both tyres. Is this normal?

It's a wear indicator.
When you cant see the holes anymore, it's time to replace the tyres.
(but before people read this and panic because they cant see the holes on their own tyres - not all tyres have them. Possibly just continentals?)
