Roasting joint to replace fillet in beef wellington?

Just come home to my girlfriend cooking dinner, she is making beef wellington but I just noticed it is a beef roasting joint and not beef fillet. She isn't going to alter her timings, despite the different cut of meat.

The packing says it should take 2 hours at 200 degrees, she will be cooking it for 45 mins I think with the pastry round it.

Is it going to be edible? I am a little worried the meat is going to be half raw :/
 
I made a wellington a few weeks ago with roasting joint, I adjusted my times slightly but not massively. I fried the meat first for a bit, to seal it which will help with the cooking times. I like my beef rare though, so it wasn't an issue for me. It all really depends on the size, and cut of the meat though.
 
Should take 120 mins but will only be cooked for 45? Yeah, that's not gonna work!

I am seriously worried but she is getting very upset if I try and tell her otherwise as she is trying to do something nice and apparently this is me just throwing that back in her face by saying she is doing it wrong :(
 
usually the packets for roasting joints show times for burnt, i prefer my meat rarer so 45 minutes for a package that says 2 hours doesnt sound that far off, maybe an hour

Just leave her to it and then point out she should listen next time when the meat is half raw.

Hey guys, still alive and no signs of food poisoning. turns out the roasting joint was even larger than when I had seen it but she cut some of it off and put that in the freezer.

The meat we had left was still enough to feed 4 people maybe 5 at a push but never mind.

She gave it an hour in the oven and apart from a slightly tough part on the edge, the rest of the meat was very tasty, especially the middle that was slightly pink.

Next time we will get the proper fillet cut of meat and probably follow Gordon Ramsay's reciepe :)

I've tried his reciepe before, it can be a bit fiddlely (we did have a huge fillet cut though which didn't help) but it does taste delicious - well worth trying. :)
