Just decided to start using openDNS ... simple to setup on our RT-N56U router - but also very easy to bypass by setting DNS on PC/device to 8.8.8.8 etc.

Is there any simple way to get the router to block DNS requests other than to itself? Googling gives some suggestions that you can achieve this via the firewall but any attempts I've tried have failed ... also I found that some other routers have a setting to intercept all DNS requests and send them to the DNS server it is set up to use.

Any suggestions?

I dont know if theres an easy tick this box and its done option, but you could add static routes for all the major DNS providers and point them to a local address so they go no where. It's under the LAN section and then the Routes tab
