Running an Minecraft server under ESXi

I'm looking to set up a Minecraft server for my lad and a few of his mates to play on - about 5 players total. From what I've read, it seems pretty simple to run a Minecraft server so was just wondering if anyone's found their own preferences? I'd prefer to use CentOS over a Windows server but am comfortable setting up either. Any gotchas I should be aware if anyone's gone down the route of running a Minecraft server under a VM?

Let me know how you get on as I would be keen to set-up a little minecraft server of my own. Any helpful tips/pitfalls to avoid would be great!
