Some MSI motherboards have 3 pin on board S/PDIF connectors.

What I can I get that I can connect to this?

Ideally I would like something that would connect to a coax socket that I could mount on a blank slot plate on the back of the PC.

Those are generally used to connect the sound directly to graphics cards, generally all newer cards pipe it through the PCIe connection so it is a bit outdated. However a product you might be interested in might be "Gigabyte CB-12CR11SPD". Google it, might help you i'm not sure :)

Thanks, that is the sort of thing that I was looking for.

I eventually found that searching ebay for 'S/PDIF bracket' produced similar products.

My Asus P5B-V motherboard has taken a dislike to running its POST and I may replace it with a cheap MSI m-atx board. I plan to get a Haswell CPU/mobo/memory next year when they become available.

Good idea. If possible, you should get one with an S/PDIF if you want that functionality as most motherboards come with that functionality now.
