Lets see your recipe. I normally have some Extra Virgin Olive Oil, Balsamic Vinegar, salt & pepper.

That's it, fairly simple but like to experiment some more, what are your suggestions?

At work we use balsamic, coriander, sweet chilli sauce, garlic and oil. I hate balsamic vinegar so don't like it but pretty much everyone loves our salad dressing.

I usually add a bit honey. It tastes great!
3/4 extra virgin olive oil
1/4 vinegar
1 tsp mustard (a spicy one)
1 tsp honey
salt
pepper
a bit tabasco

French mustard
Red wine vinegar
Sunflower oil (or olive oil if you're feeling healthy :p)
finely chopped shallots
finely chopped fresh parsley
touch of salt
touch of pepper

Good olive oil, sea salt, freshly ground black pepper and a squeeze of lemon. All too often disappointing but sometimes it's absolutely sublime.

Extra Virgin, Lemon juice, ground black pepper, salt.

Depending on how I'm feeling I may add some basil/mint/oregano, but usually just with the 4 ingredients above.

Normally ...

Olive oil
Vinegar (sweetened ... quite often use a bit from a jar of gherkins in sweetened vinegar)
Finely chopped garlic
Finely chopped chilli

Normally use it on my homemade pasta salad.

Coriander, in salad dressing?! Where do you work, is it a chain? If so tell me so I never have the salad dressing :p It's creeping in to all sorts of stuff these days and increasingly hard to avoid.

As for me, I vary it all the time and just experiment with whatever I have in the cupboard and what will go best with what I am having.

Vinagrettes-
Oils: Olive, rapeseed, sunflower
Vinegar (or subsitute): White wine vinegar, cider vinegar, balsamic vinegar, lime juice, lemon juice, grapefruit juice
Other ingredients: Salt, pepper, chilli, capers, garlic, dijon mustard, wholegrain mustard, paprika, worcestershire sauce

If you want something creamier then sour cream is a nice addition.
