It's that time of the year again, you can get that beautiful salty green vegetable. What are you going to do with it?

I'm thinking of a meal with Samphire, Asparagus and some lovely pink Trout all drizzled with some homemade Hollandaise & fresh black pepper.

I've never tried it but I want to. Hows bessed to cook it? In a pan with butter and a little stock to sort of steam it?

Steam it until it's soft, lashings of butter and a dash of black pepper. It tastes like salty asparagus.

It's a wild vegetable that grows on the coast, it's pretty specific to the South East - you can only get it for about 4 weeks a year around June and have only seen it available in London, Essex etc.

Very nice food.
