Thinking of replacing my old 22" with the above monitor and then I noticed this morning that OCUK are doing a triple S23A700D setup and a very nice price. Will my Sapphire HD 7850 cope with 5760x1080 res with good fps to make use of the 120Hz? I mainly play BF3 & COD.

No. For that kind of resolution you would be wanting Crossfired 7950s or 7970s or Nvidia equivilent to even begin to take real advantage of the 120Hz refresh rate. Sorry to be blunt but a single 7850 barely has the horsepower to drive a single 1920 x 1080 display over 60fps on games like BF3 even under quite low graphics settings. CoD is more forgiving but I still think you'll struggle unless you want to turn down the eyecandy considerably.
 
Ok, thanks and no probs being blunt. I had a feeling that would be the case and buying 3 monitors and 2 7950/70's all at the same time is out of the question so I'll stick with single monitor for now.
