SATA HDD for extra storage?

I'm currently in the process of buying new bits to build a new PC.
Storage wise, I've been looking at a 1TB SSD like the Samsung 860 EVO/Crucial MX500 or a 660p M2 NVME drive for my main boot drive.

I'm thinking of purchasing a SATA HDD for installing games/software to plus movies and music so not to clog up the boot drive.

What is recommended for best speeds and reliability? I would probably be looking at 2-4TB options I think.

It's been nearly 10 years since I last looked at drives so I'm even unsure if that would be the best route to go now!!
 
Sorry all, Didn't even realise I had so many replies to this.

I wouldn't mind considering two SSD's. I may do that and also just keep my existing 1TB mechanical. I'm still swithering over NVME or stick with a 'regular' SSD.
 
A question for you all.
Would it be better to have a 500Gb SSD for Windows and another 2Tb SSD for data

Or

2 X 1TB?

I've noticed the 500Gb mx500 dipping under £50 now and the 1Tb is £115. Good chance it will drop a bit more?
