Sausage and oats stuffing (for chicken) ?

Is this a thing? We're doing a roast and have a couple cheapo sausages left over. We're hosting yet another gluten free, picky friend so was wondering if it's possible to bodge together a gluten free stuffing out of sausages, onion and oats? Should we soak/cook the oats first? Any ideas? Struggling with my google-fu today :o
 
Sausage meat is a pretty much a staple of good stuffings, and I've sometimes resorted to buying sausages when I can't source the basic sausage stuffing.
You don't need any oats

I recommend leek and chestnut with the sausage.
 
Make sure the sausage meat is gluten free, most isn't, and I'd soak the oats in some stock first else they will suck the moisture out of the meat+onions and make the mix quite dry.
 
But sausage meat often contains rusk which in turn is often made of wheat... You may want to check....
Woops, nevermind :o She's not properly allergic to wheat/gluten, she is trying to reduce it is all (yeah yeah I know..).

We ended up frying shallots softly in butter with some dried sage and parsley, then adding the oats. Turned the gas off and added some milk to soak and cool. Once cool we mushed in the sausage meat and made little balls. Put in the fridge to set and cooked in the oven for 45mins ish. They were lush! Almost nicer than regular stuffing I have to say! :)
