Would something like this work from a gamecube to a PC monitor? Any reason why not?

It might not look very nice, it depends how good the adapter is. It outputs in 480p so at least you can keep the original picture, you might get some static off it which will give the picture some fuzzyness.

All you can do is give it a try really, the reviews on Maplin are positive at least.

SCART (VGA Analog) to HDMI (Digital) will not be cheap and will NOT be pretty. Can you not get a VGA connection for Gamecube?
