... and I have a quick question. I am confident about every aspect of my driving except for large, complex roundabouts, where you have to pay attention to the roundabout diagram prior to reaching the roundabout, the arrows on the lanes at the entry to the roundabout, and whatever text is also on those lanes, and also at various points around the actual roundabout itself!

To give you an example of a roundabout that's been giving me fits, this is one near me (Beckett's Farm, Birmingham):

Is there a general rule of thumb you would stick to or any advice you would give someone that needs to take one of the exits after the first one (which is easy because you just stay in the left lane and indicate left)? E.g., if you aren't familiar with the road markings at a roundabout, should you stick to the middle lane and approach slowly until you get a clear read? And I've also heard people say, 'if your exit is after 12 'o' clock then always use the middle or right lane on approach.' Is that correct also?
 
My advice for roundabouts like that is to leave enough space to the car in front so you give yourself a chance to read the markings on the road. The twelve o'clock rule is a good general rule of thumb to follow in the absence of any other information.

also isn't the thick arrow a continuance of the same road thus straight ahead.
so you can work out what lane to be in from that.
