I have a GTX 560Ti 2GB.

Would anyone reccommend either getting a 2nd at approx £200 for sli or an upgrade to a GTX 660Ti for around £50 more?
 
SLI can get hot, use a fair amount of power and need a decent PSU and can be poor support in some games.

I run SLI and have no probs but the above is what I noticed the most. I would sooner have a 1 card solution but as you have a decent 2GB version, it could be a good saving going SLI if you have a big enough case and PSU :)
 
Unless you want to stick with Nvidia i would get the 7950, its faster than the GTX 660TI and the same price.

The GTX 660TI only has a 192Bit memory bus vs 384Bit on the 7950. which is perfectly fine at 1080P, but personally i would trust such slower degree of memory bus.
 
Do not spend 200GBP on a 560Ti!

Given that you have the 2GB version, if you can get another second hand 2GB one for around 90GBP, then that would be a good deal and you will get really good performance.

But otherwise, just sell your 560 and get a 7950.
