Send an email when matching email received

I want to setup an automation that emails a contact if I receive a certain email (sender/subject) in Gmail. I also want some of the information in that email to be copied over. I've taken a look at IFTTT but it doesn't seem to be able to do what I want. Any alternatives?

Could create a filter instead? On the Gmail website, go to Settings -> Forwarding and POP/IMAP, add the address you want to forward to, then go to Filters and blocked addresses and then the following steps:
1) Press "Create a new filter"
2) Fill out the address and subject you want it to look for, then press "Create filter"
3) On this screen select the address you want to forward to under "Forward it", then press "Create filter"

I don't want to forward the email though, just have one triggering the send of another.

It's basically to manage bookings and cleans; when I get a booking email, I want it to automatically book a clean.
