Sensor resolution

If a camera sensor has a resolution of 1080p....how does it take pictures with a higher resolution?

Surely it can't be gaining any more infromation?

It up-scales a native 1080p resolution. It is no different than going into photoshop and re-sizing the image. Therefore you are not actually gaining anymore resolution or detail, and the picture may actually look soft at it's larger size, unfortunately that's the joys of marketing.
