Hi there, with the standard software I'm pretty sure you can't - clone mode sends the same image to both monitors and thus has to be the same resolution.
However, you could use software like ultramon or (depending on what monitors/TVs you are using) you could make use of some form of hardware scaling.

Ah, interesting problem - got a nice amp you want to run sound through at 5.1 but the AMP won't take the 1080p@60Hz video signal.
Have you tried running the two connections (DVI to monitor, HDMI to AMP) in dualview mode and setting the resolution going to the Amp to be something it supports (1280x720 perhaps)?
Also, have you tried running a DTS audio signal direct to the amp via the Xonar DS using the digital S/PDIF output? This supports 5.1, is very good quality and both your Xonar and the Amp seem to support it.
