Setting cpu fan target?

Hi, I'm a total noob when it comes to overclocking, cpu fans and bios, I just got my Arctic Freezer 7 Pro for my Q6600 today and I have put it in my case.
I have some question that I hope some one knows the answer to.

1. How to set the cpu fan target?
I saw in the manual that I could find it in my bios but I've looked everywhere but can't find it. My motherboard is GA-x48-DS4 from Gigabyte.

2. How to I set my fan speed in bios or do I use some program for that?

3. I've test to set my CPU Host Frequency to 333 and my CPU Clock Ratio to 9X and that gives me 3Ghz and my temp is idle on 37 degrees on celsius and when I ran Small FFTs in Prime95 for an hour my temp was around 57-58 degrees on celsius. Is this good temp?

1. it's called CPU Smart Fan. usually it should be under PC Health menu. if you can't find it then try to press CTRL + F1 under main BIOS menu to show all options
