Setting up an email alias on Android

I'm dipping my toe into Android with a Nokia 2.2, moving from Windows Phone 10. I have assorted domains set up with catch-all forwarding to my GMail account, so on GMail's web client I have set up a default alias for sending email of me@mydomain and I'm struggling to replicate this on my new Android phone. How do I do it?

This is something you shouldn't need to be doing on the phone, it should be done at the server level.
