I’ve got my PC going into a 34GN850 via DP, with optical audio from mobo to a Razer Leviathan soUndbar that only has 1 optical input.

How can I add a PS5 to this setup. I have a HDMI available on my monitor but it doesn’t have speakers, so how could I get sound from the PS5 to the soundbar as PS5 doesn’t have optical. Really confused.

How about an "HDMI Audio Splitter". It will allow you to split the HDMI signal into HDMI + optical audio.

Thanks, and then I would need a 2 into 1 optical splitter as well won’t i? Soundbar only has 1 optical input.

Would there be any problems going through two splitters in a row?

Passing through that many splitters may degrade the signal too much, optical splitters aren't too expensive and you may just have to try it to see if it works.

You could use an HDMI audio extractor to extract the audio from the HDMI signal coming from the PS5 and then connect it to the optical input on the soundbar. This will allow you to get audio from the PS5 to the soundbar.
