Severe PC issue

I've had an ongoing issue for a long time now with my system suddenly freezing out of nowhere and needing to be manually restarted. It originally did it maybe once a day every few days, but it's got more frequent and now the computer can't be on for more than 10-15 minutes without it happening, which is rendering the
PC pretty useless.

I've stripped it down, changed the cooler, changed the ram with no luck. It's not cpu temp, as coretemp is recording it at about 50 degrees when it freezes.

The system (cpu and mobo) was built in 2011, so it's pretty old. Do I have to accept now that's just old and broken or can anyone think of any other issues which could be causing it to freeze.

One more note, stress testing using prime freezes after about 20 seconds.

My crystall ball has also severe malfunctions so what might be the particular components in it?

Though kinda suspect PSU might be assembled from cheap Chinese parts...
That's sure capable to causing various problems when it reaches its design goal of breaking up.

Not the PSU, I changed it about 12 months ago, it's a Superflower Platinum 850w and the issue was happening before the change. I suspected the PSU as it was an 8 year old Corsair jobbie, so I changed it.

It's a 2500k at stock
AS Rock Z68 mobo
16gb Kingston ram
Matterhorn cooler
EVGA 970
2 X SSD and 2 X SATA HDD

That sounds to me like a RAM issue. Have you tried it with just 1 stick and then the other? I know you said you have changed it but it is feasible that you have another stick faulty. Also make sure it is setup with the right voltage or xmp profile. Have you tried Memtest?

If you're running Windows 10 make sure to have the latest updates installed including the creators update, there was a known issue with the anniversary update that caused these symptoms on older Intel chipsets (mostly affected X79 but others too).
