SFIV: Help a noob please

Been reading through the Street Fighter IV thread but it is huge, can anyone give me some advice and really explain in a guide for dummys way the following:

Ultra Special
EX Specials

Is it possible to counter of avoid an Ultra attack when performed by the CPU?

Explain any other simple things I am missing.

Jumping or blocking is the easiest way to avoid an ultra.

If you do your ultra quick enough it's possible to interrupt their ultras too.

EX moves are upgraded versions of regular moves, that do more damage. By pressing the modifier button when you pull the move off as normal it'll come out as an EX move. Check each character's move list to see which moves can be done as EX moves.

Example: *hold modifier* quarter circle -> + square would be an EX-Hadouken with Ryu and Ken.
 
You easily counter an Ultra by either jumping, blocking, activate your Ultra in time, or even a normal attack if you are quick enough. There are so many different possibilities as it just really depends on what Ultra you are trying to avoid and finding different ways to exploit the timing.

EX Specials are just powered up versions of all the character's regular special moves but sacrificing one EX Bar in order to do a little extra damage or for full effect as part of a combo.
 
Do you have to jump away just before the Ultra is executed?

From playing last night and especially against Seth, as far as I could tell the Ultra would just hit me with no warning.
