SharePoint guru's - a few questions

Hi,
I've just started looking into SharePoint today, on our Small Business Server. I can see it will have some real benefits for our company, but I could do with a few pointers from people who have been using it for a while

1) Is the version of SharePoint in SBS 2003 a cut-down version? If so, in what areas has it been cut back?

2) The left hand menu - the Quick Launch bar - can I alter the names of the sections in there at all? It reads "Documents", "Pictures", "Lists" etc at the moment. Ideally, i'd like something like "Customers", "Internal", "Sales" etc, each with their own sub-lists, galleries and document stores. I can't seem to find how to do this at the moment :-S

3) Is there an obvious way to setup a basic CRM structure - ie., a list of Companies, with associated Contacts attached to them (as in, 1 company to many contacts)? I was thinking of just having 2 different Lists with them all in, but it seems a messy way to do it. I also don't want to add lots of boxes for "Contact 1/2/3" etc to the Companies list.

4) When you click on to view a Companies' details, can you change the info that is shown there? I'm thinking it would be nice when you clicked onto a Company, if all their respective calendar dates, documents etc were easily accessible

5) Finally, i've seen some SharePoint sites online that have a Search box in the top right of the screen - can I add one of these on? Again, can't seem to find where to do this!

6) No, honestly, this is the final one ;)
Do you have a good links to free add-ons/templates/tutorials that would be useful for a newbie SharePoint-er?
