Shish kebab question

Can anyone remember if their local kebab shop's shish is marinated in a yogurt based marinade?

My local one makes the best kebabs and their shish has a light coloured marinade on it, but I'm sure I've seen some shops whose doesn't.

I'm basically trying to find a bang on recipe for lamb shish to do this weekend.
 
Best effort, would be to try a number of different approaches over the next few days.

As a guess, I'd think they are chicken'ish mashed together with a handful of spices/herbs, and an unholy amount of salt. Moulded around a stick, and then cooked/reheated on a rotary grill.

If you want to replicate, get a chicken, remove the meat, mash it up. Add coriander leaf, garlic, cumin, and a bit of chilli/paprika. Stick it in a preheated oven, and you'll probably get somthing reasonable.
 
I don't think I've ever seen them marinated in a yogurt based sauce but I've seen plenty that will add a raita style sauce when serving.
 
I think one of the issues here is that the same word is used to describe a myriad of different dishes. I think you're just going to have to try out several different recipes and work out which bits of each give you the result you want.

If you were an experienced cook you could probably identify a good portion of the flavours and aromas when you tried your local take away but it's going to be tough to do that if you're not used to cooking with said ingredients.

Have you tried being super friendly with the staff at the take away and asking about how they make stuff? If you're a regular I'm sure they'd be happy to talk you through it - just don't obviously write down a recipe whilst they're telling you :)
 
As far as I am concerned in a kebab shop a shish is the one with cubed pieces of meat (often with peppers and onions on the skewer as well). I have tried shish kebabs from numerous kebab shops over the years and some have indeed had a yogurt style based marinade on them , whilst others have definitely been oil based marinades.

Pakistani and indian Seekh kebabs are basically lamb or chicken mince with herbs,spices & onion. Quite a healthy bit of grub. You can buy masala mixes from asian shops, made by companies like shaan and laziza.

We certainly dont use any sort of marinade.

Turkish shish kebabs.
 
I don't know measurements but when I do it:
Natural yoghurt
Lemon/Lime juice
Grated white onion
Turmeric/Saffron
Salt

Make enough to just cover the chicken pieces. Leave for 24hrs, then BBQ.

Someone had a yoghurt based tandori recipe on here too which was really good.

Almost as above but with tandori spice, fresh chilies and coriander.
