Hi I recieved my new gaming bundle from OCUK today loaded there overclock from BIOS but in windows it's showing a 5.80ghz overclock? It's a 2500k and it's meant to be overclocked to 4.40ghz. Core temp keeps switching between 4613mhz and 1600mhz.

 
Windows doesn't report SB clocks correctly.
Bouncing between 1.6ghz and 4.6ghz is.... uh, forgot it's name.. basically it underclocks the cpu when it's idle to save power.

Also... You have 8gb ram.. and 32bit OS.... fix it, now - or the OCUK faeries will come and eat your first born.

Ignore the Windows reading, it's a glitch.

It looks you have a 4.6GHz overclock.

The GPU downclocks to 1.6GHz when idle to save power. It goes back up to 4.6GHz when it needs to.

Download CPU-Z to confirm.

It should say 1.6GHz at idle and 4.6GHz when the processor is at load.

Out of interest please report back what the multiplier and Base Clock are when the CPU is at 4.6GHz.
