...and I mean ones that didn't reach their logical conclusion & ended abruptly leaving you disappointed & feeling kind of high and dry.

I'm pretty sure Ray Donovan also had at least another season to go & that was probably my all time favourite.
 
There was this show called Siberia which was a fake reality show set in Siberia. It was kind of like a supernatural'ish version of Survivor and just got more mental as the episodes went on. Ended on one hell of a cliffhanger never to see the light of day again. It was oddly quite good.
 
Banshee did get a ending, Ray Donovan got a movie to finish it up.

Biggest shock was Evil , 4 seasons and was doing very well with viewing numbers but Paramount decided against it and no one else has picked it up even after the cast tried too,

I enjoyed the santa clarita diet and pretty sure it got cancelled, along with Deadwood many years ago, I know they eventually released a film which in theory tied things up but haven't seen it as I now feel I'd need to rewatch the original series again first

Yes, I’d forgotten that one. Wasn’t it about people escaping a deadly virus? Couldn’t have been timed better given that I saw it in 2020ish

Dark Matter (2015) - was a nice easy to watch show reminiscent of many similar shows without aping them and was just getting to an interesting place when they killed it.
Travelers - great idea and still had a lot of ground it could cover.
Lockwood and Co - another nice easy watch that was just getting interesting then never renewed.

Also mourn Firefly.

Kind of related - shows I'd love to see reinvented with more time spend developing the premise:

Stargate Atlantis - though hard to replace some of the characters.

Not a series - but the cliff hanger ending of Spiderman: Across The Spiderverse was hella annoying. And are they even ever going to release the next one?
