silk/kitchen paint issues

im in the process of some painting and need some advice with my kitchen please

the previos owner has used some silk or kitchen type paint i guess for easy cleaning and its causing an issue

i lightly sanded some down and repainted with silk paint and in some places it can be easy removed
ive let it dry and am currently sanding the whole kitchen down so it has a better surface to adhear too

my question is as i only want to paint once
what type of paint or what do i do?
i like the silk paint but now thinking a kitchen matt paint would be better as it would show less imperfections
i really just want to paint it once and thats it and it to stick properly this time

what can i do?

i originally sugar soaped the walls, but now i have sanded as best i can and sugar soaped again

im going to
zinsser the walls
fill the paint edges with some fine filler and then sand down when dry
and lastly some kitchen matt paint as it should be more forgiving with the finish than silk kitchen paint???? johnstons kitchen paint will be used

i think there were x2 mistakes, x1 the previous owner did not prep correctly and i did exactly the same
