If I had a motherboard which supported CrossFire such as this would I still be able to put a single 7800 GTX in it and have no problems, or does it mean that only ATI graphics cards will work on this specific motherboard?

Yes, any mobo will work with any single card correctly provided it's got a working pci-ex slot.
Crossfire / sli only applies if you want 2 gfx cards, with 1 gfx card you can put an ati card in any sli board and any nvidia card in any crossfire board.
