Made this tonight and enjoyed it very much. It's not heavy and can be knocked together in twenty minutes. No photos though I'm afraid!
You will need:
Baking tray
Baking paper
Two saucepans
Small knife
Scales
Wooden spoon
100g Caster sugar
4 peaches (de-stoned)/tin of sliced peaches
25g pistachio nuts without shells (chopped roughly)
2 tbsp redcurrant jelly
4 tbsp port
200g greek yogurt
1) Pre-heat your grill to high. Half peaches, de-stone and place into baking tray. If using slices, drain from tin and place onto tray, making sure they are spread out.
2) Place the nuts into a heavy-base saucepan and sprinkle with two-thirds of the sugar. Heat gently whilst stirring until the sugar is dissolved, then apply more heat until the mixture is golden. Turn off the heat and transfer the mixture to a plate or tray with a sheet of baking paper
3) Meanwhile heat the jelly and port in a small saucepan on a gentle heat and stir until mixed together into a whole
4) Sprinkle the remaining caster sugar over the peaches. When the port and jelly is heated enough, pour this over the peaches too. Place tray in grill and heat for 8-10 minutes.
5) When peaches are heated, take out and place on serving plates. Add a dollop of greek yogurt and break up some of the pistachio mix over the yogurt.
6) Tuck in!
