Well I've just done this with 2 HIS ICEQ Boost cards.
Been running 1 HIS 7950 and its been ok but struggling with BF3 in eyefinity at 6000x1200. Was running on medium settings around 30-40 fps. Thats with the card only clocked via CCC at 1050 core and 1450 mem. Now have both running at this speed.
I can certainly recommend anyone thinking about this to do it - makes a huge difference!! Heaven benches have pretty much doubled.
I'm running Eyefinity BO2 maxxed out and its well over 100fps.
BF3 Eyefinity is now 55-70fps on High settings.
Still got to play with Far Cry 3 and a few other games but so far very pleased and happy with the results.
One question though, whats the minimum fps to think of running BF3 at? I'm happy with high at over 60fps most of the time, just the odd dip under, but am I right thinking that if I go ultra and keep it over 40fps it shouldn't have much of a detrimental effect on the game etc?
