Single GPU Vs SLI

So I went overkill and purchased a whopping machine.

Problem I'm thinking now Is did I get the Right Mobo and GPU.

Now My Mobo is

And I have 2 EVGA GTX680 4GB SLI.

What I am thinking is would 1 GPU be better than 2,3 or 4 of its equivalent ?

Also Am I right in saying my Mobo can only support 3 GPU in SLI... Would this mean I would have to upgrade IF I wanted 4 way SLI ?
 
Ah right,

So what your saying is 2 Way SLI works better than 4 Way SLI ? If that is the case I will keep to 2 GPUs and not worry about having 1 monster one or 4 smallers in SLI
