Sirloin joint

Ive managed to get myself a 35 day aged 960g Sirloin joint, i know theres loadsa stuff online for how to cook it, i was just going to pan sear it then into the oven for however long but i wondered if any of you have any funky suggestions... however i am staunchly a medium man.

So does anyone have anything good to do with one?

I wouldn't do any more than roast.

However, I would suggest you get a meat thermometer to avoid over/under cooking.
 
Cut into individual mini roasts tie up pan fry to colour and roast for 12 minutes wrap in foil and a tea towel for 10 minutes use juices for gravy carve and present
