Ok Its simple or is it because I am not sure

I want to go skylake 6700K

But do I go Micro ATX or ATX

Micro ATX would be the ASUS Z170 Gene

Estimate the CPU and motherboard £460ish

the rest of the kit would be as follows

YOUR BASKET
1 x Crucial BX100 500GB SSD SATA 6Gbps 7mm Solid State Drive (CT500BX100SSD1) £129.95
1 x Corsair Vengeance LPX 16GB (2x8GB) DDR4 PC4-19200C14 2400MHz Dual Channel Kit - Black (CMK16GX4M2A2400C14) £99.95
1 x EVGA SuperNova G2 750W '80 Plus Gold' Modular Power Supply £94.99
1 x Phanteks Enthoo Evolv Micro ATX Case - Black £89.99
1 x Microsoft Windows 10 64-Bit DVD - OEM (MS-KW9-00139) £79.99
1 x Prolimatech Black Megahalems CPU Cooler £52.99
1 x Noctua NF-P14s REDUX PWM 1200RPM 140mm Quiet Case Fan £13.49
Total : £575.45 (includes shipping : £11.75 Ex.VAT).

Total for the above £575.45 +£460 Cpu and MB Total £1035.45 (£1021.35 as Delivery Free)

Or do I go ATX with a Z170 Ranger and replace the case with a EVOLV ATX approx. £50 more for the case but Ranger will probably be cheaper than a GENE.

Is the ATX setup likely to be cooler?

Is the 750 watts going to be enough with a 980ti (maybe wait for Pascal) presently have a 670GTX to make do with, 2 WD 2tb drives a further SSD and a M2pcie 256gb SM951

The ATX wil likely be slightly cooler just because it will be in a larger case, but it's unlikely there are any feature benefit from going ATX. Unless you have a good reason I would go mATX every time.
