"sleeper" living room setup advice.

Hello AV maniacs,

I am refurbishing my house and part of it making the living room setup.
What I am looking for is TV on a wall, and projector with pull down screen, and 5.1.2 Atmos setup.

What I have now is old av 7.1 onkyo av receiver and some crap speakers and old TV that I will slowly upgrade during the years, so I want to "future proof" the cabling, what I would like assistance on:
1.Some good quality brand hdmi (possibly hdmi 2.1 cable) for the projector (8m) any other cables I need to run except power for the projector like a cat6 ? The projector is crap for the time being but hoping to get something nicer so again future proofing here.
2. At first I will only be doing 5.1 and leave the 2 hight channels in the celling, I saw the height channels need to be 45 degrees to the sofa is that correct? I will need to upgrade my onkyo down the line to be able to do atmos
3. What is optimal height of rear speakers? Just a bit above the ears when sitting on the sofa?
4. For a subwoofer can I just run coax under the floor and terminate with f connectors?
5. If I ever decide to do powered projector screen do they have the power plug on a certain side? Ie can I leave a spur in the ceiling on the right side for example for later installation?
6. Anything else I should be thinking off?
