So I got a choice...

I currently have a Gigabyte GeForce GTX 560Ti SUPER OC 1024MB GDDR5 that I have had for just over a year and a half with 6GB of RAM.

Now I need to decide on a new GPU either 660 or 670 or...

Get another 560 and SLI it, I have never dabled in SLI before so can someone give me the pro & con of SLI and what you guys thinks in x2 560 compared to a 660 or 670?

Note:- My GPU runs perfect so this is more of a learning lessons then anything.

I personaly thought about going SLI on a 560TI about a year ago but the 1GB of VRAM was the reason I didn't. here are the pros and cons (your situation).

Pros.
sometimes double the power (double frame rate in some games almost)
easy to setup (just enable SLI in NCP)

Cons.
Heat (The bottom card will create more heat in the case and make the top card a fair bit hotter)
PSU may need to be bigger (with more PCI-E connectors)
Noise (2*GPU's whirring away was too much for me, so went water cooling)
General power cost (2*GPU's will add to your leccy bill slightly)
Support (Nvidia are great at getting SLI drivers out quick but not always)
1 GB will be a massive hold back, as most newer games need 1.5GB+ at decent resolutions and settings.

In short, go for a 670 :)
