I'm just in the process of planning a build migration and watercool.

I'm just curious if there would be point in getting another Titan X Pascal for SLI

My most common activities at the moment are...

Lightroom
Photoshop
Call of Duty Infinite Warfare
Vive Pro VR Gaming

But I enjoy other games like Witcher 3, GTA V, Skyrim etc..

Monitor is 3440x1440, Dell U3415W

My vague guess at an answer is the only reason for SLI is benchmarks :D that I should save my money for a 2080ti as it will have more impact on what I do

even if you did get a 100hz display, i wouldn't bother going SLi, my 1080 could do with a bit more grunt on some games to reach the cap (such as witcher 3) but as the monitor has gsync, its still very smooth. But your card is a step above mine so unless you went for a 120hz+ display, wouldn't bother. Also new cards coming relatively soon anyway.

sli has a lot of extra problems too, such as micro-stutter and general compatibility

Witcher 3 has very good SLI support.

Sadly DX12 is killing SLI support in the latest games as Devs can not be bothered due to the extra work and expence.

Few games I have played recently have had SLI support including Far Cry 5, but for most the part I would not bother unless all the titles you play consistently support SLI scaling well. Your single Titan X should do 60hz at 3440 x 1440 no real issue, I know even when I run a single 1080Ti it does in excess of 60 FPS in most games at 3440 x 1440 maxed out mostly anyways.

When you come to upgrade your panel, I would then look at what GPU's are out then, may be we are on next Gen by then.
