I have the below configuration in SLI.

Bought wildstar few weeks ago and noticed that my cards get really hot.... 80+ degrees. I can actually feel the room heating up... eventually I bluescreen or get a fatal windows 8 error.

My first thoughts are my cooling and case need upgrading... but then I wonder why I never had this issue before.

Any thoughts, shall I hoover my PC out ? lol :)

Clean all the heatsinks. your case is like an hoover and the cards will be full of crap.
if there over clocked lower the clock to stock for a bit and see if you have problems still

Do I need to take the fans off the cards to do that? Is it noob friendly?

that would depend on how bad they are .
what is the card you have so we can see the cooling set up

edit: just seen your sig MSI 560Ti Twin FrozR.

you can remove the cover without having to take off the full cooler so your should be ok.
But remember the hoover is the last thing to use. it can pull of other parts like little resisters. i use a small paint brush and and a dust buster(low power) dont set the dyson on it

You have not mentioned what case you have and your fan config.
The only time I had a heat issue with my 560s, was due to insufficient air circulation.

I wouldn't have thought temperature alone is causing the issues. My GTX660s in SLi run in excess of 90C at times as thats what the EVGA fan profiles allow and i've never had any blue screens.
