Slow-mo Guys 7d shutter vid

It actually looks quite violent and stressful on the mirror and shutter.

Yeah that's why shutters have a finite life and why they keep trying to improve them I guess. The new 7d2 mirror/shutter is rated for 200k actuations or something.

I guess eventually everything might be mirrorless?

^^ that is why cameras will all go mirrorless. The mirror mechanism is very complex, quite expensive to build and design, is always a point of failure and has physical limits on flipping speed and blackout time.

Presumably shutters will be don't away with. What's the point of them when an electronic signal to tell the sensor when to capture light is so much faster and has no moving parts?

The issue with shutters (not mirrors) is that most sensors cant stop and start recording data across the while frame in a single instance, instead rows of pixels are read in one go which is why you get a rolling shutter wobble effect when shooting video. Sensors can be designed to have a readout of the whole sensor in one go and thus offer a global shutter.
I presume since the global shutters are still not common there is a lot of complexity in adding a frame readout capability. Sensors designed for video have a global electronic shutter as do the Nikon 1 sensors but none of the Nikon DSLR sensors do.
