Lindisfarne traditional mead to be precise. It's very strong: 14.5% alcohol!

With which food should I drink it? I have a joint of lamb in the fridge.

Drink it however, with whatever, really. It was likely never intended to be an accompaniment to any specific dishes, and there are dozens of varieties that go well with the thousands of historic recipes from around the world... Greek, Roman, Medieval, etc...
I would suggest nothing too sweet, but really up to you.

A good meat pie, or a game roast with seasonal veg should be fine. Alternatively invade, loot and pillage a neighbouring nation, and then line the banquet hall with your vanquished enemies, as you sit down to feast and toast the gods.
