Software needed to record multiple audio inputs

Right.

First of all, I need something to allow a few people from around the country to have conversations with each other. These people are specific and therefore I assumed Skype would be the best best. Correct?

Second of all, I need something to record all of the conversation. I've not got a clue about what to use!

Any help would be appreciated.

Will check it out. Skype then Audacity also sounds viable. No pun intended
