Software to act as if it were an Epson printer

I have a bit of audio test equipment which will print results directly to an Epson printer using Epson ESC/P. The output is via RS232. I am looking for software to run on Win10 which will look at the pc's 9-pin serial connector and accept the incoming data, rendering it on the screen in just the same way as a physical printer would. From there, I want to print and save the screen image, preferably as a PDF but a graphic image would be OK. Is such a program available somewhere?

My current difficulty is that I can't find a suitable Epson printer to connect direct; it used dot matrix units in the original design.

It's a Lindos LA102 audio analyser. The manufacturer is very helpful and has published a lot of detail in the user manual, also a proprietary program which does exactly what I want - but it costs £300 and I can't afford that :(

Have found this doing a quick google, but specifically mentions Linux. https://github.com/RWAP/PrinterToPDF

But Windows is not mentioned and only Linux. So could either install Linux on a Raspberry Pi (with USB to RS232 adapter) or run Linux from a VirtualBox VM and still use an adapter.
