Should I buy a 2nd hand 1080Ti on EB to replace my Titan XM?

I skipped the Titan XP and Titan Xp but think I will get more cash selling my card now and selling the 1080Ti later instead of keeping my card till later.

All above as I'm waiting on Volta or whatever next gen for desktop is called.

Any gain will be marginal when you take into account fees and hassle. If you're only doing it to potentially save a few quid then I'd seriously look at the potential risks- mainly warranty. Do you have any left on your card? Are you absolutely sure you'd be able to use the remaining warranty on the 1080ti you purchase? From having just had a 980ti fail on me after 20months a few weeks ago I'm very grateful for the warranty.

Yes both are EVGA.

A Titan XP (not Xp) is 60% faster than my Titan XM esp at 4k and a 1080Ti is faster again, only the crazy priced Titan Xp is fastest and Volta may be here in early 2018.

I am not trying to save cash going from my card to the 1080Ti as it will no doubt cost me addition money just trying not loose more cash later going from my older card to Volta and I could do with a boost in some games.

Yeah, if you want to do it from a gaming/performance perspective then definitely do it. Sorry, I was thinking you were purely doing it because you thought you could time the markets and make a few quid. While that can happen, it often goes wrong, but if you will actually enjoy the new card for 6-12 months first then do it!
