I was looing at a few bench marks online with gfx cards.

They have the info up the top left of the screen, stuff like

cpu usage
frames
temp ect

Is that a 3rd party software?

Also Is the something out there like a usb to a little screen that I can pop under my monitor that can display stuff like this?

Yes, probably Afterburner + Rivatuner. It's free.

There probably are some still around, heard some mentioned before but I'm unfamiliar with them.

If the temps/values were displayed in your taskbar would that do the job? That's what I do using HWiNFO64. See pic below, there's all sorts of stuff you can add. My own preference is (from left to right) CPU voltage, CPU cores and cache frequency, CPU usage, CPU temp, GPU usage, GPU temp, GPU memory usage, RAM usage. And I have alerts set for CPU voltage and temp and GPU temp.
