Some sort of sauce to go with rice...? Ideas!

Can anyone suggest a sauce i could have with chicken/whatever, rice and veg? I've used various pasta sauces or sauces that come with pre-prepared chicken but i'm open to new ideas.

My current favourite has been using a stock cube and simmering it for a while...so something like that?
 
What sort of sauce?

A white sauce can go nice, depending what you're having rice with (i.e. fish).

Tomato type sauce I would just gently fry a couple of finely diced shallots in a knob of butter or olive oil until just turned translucent. Add a finely sliced or crushed clove of garlic and fry for 1 minute. Add a can of chopped tomatoes and simmer for 20 minutes. You could also add 1tbsp tomato purée or if I'm in a rush I just add 2-3 tbsp red Heinz ketchup a few minutes before you finish simmering.
If you do add ketchup you should only need to season once simmered but if purée you may also want to add a pinch or two of sugar just to counter the tartness of the tomatoes (it can depend on the tomatoes you used - I use plum or chopped). As always with cooking keep tasting it and add what you think it needs.

Plenty of other sauces around but those are two that are quite adaptable - the tomato based sauce is a great base for pasta dishes as well. You could add pancetta or smoked bacon before frying the shallots in the recipe above or even chorizo. I have also added mascarpone at that point to create a lovely creamy tomato sauce.
