Long story short, we've got an old 32 inch Samsung HD set - which is fine - we actually don't watch loads of TV.
However, we've got our first baby due in June.
I've got my heart set on a good TV before the baby/being a parent takes all the money.
My priority for viewing is Moto GP and other Motorsport. Films as well.
I know nothing is future proof, but it seemed wise to go 4K? I can got to £800 if needs be and any additional advice is greatly appreciated.
Either way, i'd want to go and actually "see" the screen before purchase, as I believe that some look better to others based on your personal preference.

. I've got two boys, 7 year old and 6 month old.
This is a difficult one then, particular in consideration of what you watch (Motorsport mostly). I'll try and summarise a bit some things to consider.
The move from 1080p to 4K is pretty minimal, especially in consideration of screen size and viewing distances. In the vast majority cases will struggle to differentiate between the two. I have a Samsung 55” KS7000 and sit around 11 feet from it, I notice “some” detail changes but it’s nothing to shout about. However, since you're buying a TV anyway before the baby comes you may aswell get a 4K TV. So it's really comes down to whether you want a set with more longevity.
The main advantage of moving to a 4K TV now is Wide Colour Gamut (Which the Sony you posted has) but more importantly HDR, you’ll see allot of TVs advertise “HDR” but they don’t actually demonstrate it well (if at all) as they lack the brightness / ratio required to do so. It really does give you some “wow” moments dependant on the content being played.
HDR content is pretty sparse and I can’t see live sport getting it for quite a while, especially as SkyQ doesn’t “Yet” support HDR (even though it has the hardware to support it). HDR is however starting to play increasing role with Movies and TV, with manufacturers pushing it hard this year at CES. You’ve got a few options of 4K HDR content on Amazon, Netflix and of course, Ultra HD Blurays. I do think the next 1-2 years is going to see a considerable amount of 4K HDR content coming out, any new series from Netflix or Amazon is going to have it. You'll also going to see quite a clear division between sets that are Ultra HD Premium Certified and are not.
Then again, all of the above is a bit of a moot point if what you predominately watch is Motorsport, if you’re not into your Movies or TV then the lack of HDR isn’t likely to bother you.
It’s a balance though.. If actually you’re buying a TV to keep you going for the next 3-4 years and in that time will likely watch TV and Movies on top of you sport, I’d say the extra investment in a set which is certified Ultra HD Premium is a wise move.
As you say, you're going to demo. I'd suggest popping to Richersounds or similar and ask them to show you the Sony but then also get them to demonstrate a Samsung KS7000 with some 4K HDR content, you'll see quite a visible difference in the two and can then balance whether you figure it's worth it.
