Anchovy sauce is fermented
Cheese is moldy

Dark soy sauce gives food a lovely dark colour, the light stuff is for seasoning.

I don't see the issue? It adds colour and saltiness. How can that be bad. Perhaps your using a horrible variety or only tried from a washed up takeaway.

I go through about a litre every 3 months.

Dark soy sauce also adds sweetness.
 
I've used dark soy on pretty much every Chinese meal I can remember eating. Love the stuff, though it's not really for its nutritional value.
 
Combined with the right ingredients soy sauce is essential for getting that east Asian savoury flavour. I'd give it another go. Try the cheap, dark Chinese varieties first because that's more for colour and weaker flavour. Good for sloshing over noodle dishes. Don't be afraid to use a bit of sugar to balance it in stir fries etc.

I think you are seeing soy sauce as a condiment, like ketchup or mayonnaise, which it's not.

It's to be used in cooking for the most part, and adds flavour to certain types of dishes, for example adding soy sauce to fried rice enhances the flavour.

I can't imagine many people actually particularly like the taste of soy sauce by itself, but then it's not really meant to be used in that way.

Nothing, he's scared/disgusted as its fermented. He's got a totally squewed mind set, but that's most of the population these days.

You're really getting bent out of shape over this aren't you? Why are you getting so bothered?

It just looks like he doesn't know how to use it, yet you've some how derived that he's got a screwed mindset, and scared and disgusted by it because it's fermented.
