This should do the trick, however I would also go for 1-2 7950 over a 7970, the price difference just doesn't match the performance gain imo. Comparison

Edit - Or if you REALLY want a 7970, at least get one that matches the board ;)

I would swap out the Gigabyte Mobo for MSI Z77 MPOWER and the CPU cooler for a Corsair H100i - or should I go for a custom watercooling loop? Not sure what to do

Gigabyte come highly recommended, considering they have a UK RMA service. You cannot go wrong with either but I'd go with the Gigabyte, unless they are particular features you require.

As for cooler, I highly recommend going for a high-end air cooler (they offer great bang-for-buck performance). Water cooling is just a pain and the novelty will quickly wear off.

As for the 7970, I'd still recommend the 7950 (best bang for buck card). With your budget you can fit two in.

If you're going for just one GPU (with no intention to SLI), then a power supply with more than 500W will be wasted.

You may be correct in some cases, but if an air cooler is hanging over your RAM slots, which make them un-usable, a CLC is a great addition allowing you to expand your RAM capacity!

Not if you use low profile RAM in the first place. Which is exactly what Trigger has done in his spec.

We often spec LP RAM as it just makes sense, a CLC will "show off" the internals of the rig nicely if you have a window in the case but a good air cooler is still better value......infact most of my friends are impressed simply by the size of the ally heatsink I have, which is "only" a Gelid Tranquillo on my HTPC ;)

It helps yes, but in the event of not having low-profile, it's a a great option!

A 750w would be fine, but in some occasions the 850w is only few pounds more.

The XFX PSU is a good PSU.
