Spec Help Please on partial build

So in Feb 2016 I trundled up to Stoke and came home with £2k of components in my boot. Through 3 GPU upgrades and a few HD ones, that 6700K and Gigabyte Gaming 7 combo has served me well. I think I have to accept now that after 8 generations of CPU have passed by, the time is up. Europe Universalis 5 is owning my CPU/RAM and it's the first game to make me think about upgrading the core of my system rather than just swapping in a new GPU.

So I currently have a 4070 GPU and given I am not an eye candy junkie, that serves me OK for the games I tend to play; strategy stuff (EUV), factory stuff (Satisfactory, Factorio), a bit of Flight Sim all at a ceiling of 60fps. I game on a 34" Dell Ultrawide @ 3440x1440 which again I dont want to replace as it doubles for work as well. So I'm looking for everything but the GPU and Monitor/Keyboard/Mouse to bring my system into the 2020s.

Case wise I'd like something compact and fairly clean style wise. It lives under the desk so having lots of glass seems a waste. Maybe Corsair 3000D sort of look.

But I am years out of touch on compatibility and other than knowing that I think I want to go down the AM5 route, possible 7800X3D with the ability to drop something faster in later if needed, I really dont know what would work well together. As the games i play are generally fairly quiet sound wise I appreciate a quiet, preferably inaudible, setup..

So a balanced, quiet 7800X3D system with at least 32gb RAM and 1gb system drive & Modular PSU, minus the gfx card is what I think I'm looking for with a budget up to around £1000. If we can do it cheaper that's great but I'm happy paying a bit extra and getting something that will last me 5-6 years min with just gfx upgrades as required down the line.
 
Nice... Anything to gain noise level wise with going to an all in one; or will the Assassin be quiet enough in normal use?
