Spec me a bulk meal

Following on from the great successes i've had from you guys in the past, it's a "spec me a meal", but..

having friends around for dinner, 8 of us in total.
I've never cooked for this many before, but the problem is - what can i cook that's easy in this quantity?

8 portions of anything will fill a wok etc, so any ideas?
 
Make a roast! Get a leg of lamb or big piece of roasting meat or a huge roasting bird. Easy to do and looks so impressive!

Or

fajita/curry are great suggestions too

something which everyone can share is nice :)
 
Assuming they all like it then I'd just do a huge pasta bake. Two large baking dishes should do 8 people.

Cook a bucket load of penne pasta, make sure it's not too well cooked. Thinly slice around 4-500g of cheese depending on taste (strong chedder is good). Cook a whole lot of bacon and sausages and thinly chop them all.

Mix a lot of sauce in with the pasta then do a layer of pasta, layer of meat, layer of cheese and repeat until you've come to the top of the baking dish then do a good layer of cheese on top.

As I said two big dishes of that should do 8 people. And left overs keep for 3 days or so.
 
Home made pizzas! (well if your oven('s) is/are big enough that is)

Nothing like having 2 or 3 pizzas that everyone can share (with different toppings of course). You could even get your guests to help n have some cooking fun with it all :D
 
Baked potatoes & then cook or have ready the following.
Smokey bacon rashers.
Cheese Lots of grated & different sorts.
etc etc etc

+ Tons of Decent wine.
 
This, just increase the ingredients by 50% and include salad and bread to bulk it out.

ps. this is my tried and tested recipe ;)

Spicy Sausage Pasta
Serves: 4 large portions

500g fresh pasta of choice (I used fusilli)
8/6 (dependant on size) sausages of choice (I used Sainsbury's Taste The Difference Chilli & Coriander Sausages)
2 large courgettes, sliced into 1/4 inch slices
500g mushrooms of choice, sliced
1 yellow pepper, sliced
1 red pepper, sliced
500g plum tomatoes, quartered
1 red onion chopped
6 cloves of garlic chopped
5g chicken stock/gravy granules (I used Knorr)
10 fresh basil leaves, chopped
Dried chilli flakes
60g grated parmesan cheese

I found using 1 large wok and 1 large (2 litre I think) pasta pot works great, minimal washing up.

Fry the sausages in the wok with a little oil until brown all over, and set aside.

Fry the onion and garlic in the wok until tender, add more oil if needed.

Add mushrooms and courgette and fry for 4 minutes.

Add peppers, tomatoes and basil.

Slice now slightly cooled sausages into 1/2 inch slices.

Add chilli flakes, chicken stock granules, parmesan and 40ml of oil and mix well.

Re-add sausages and simmer, whilst preparing the pasta as per the instructions (about 5 minutes).

Drain pasta and return to pasta pot. Add contents of wok to pasta pot and stir well.

Serve and enjoy

Nope, they are 4 LARGE portions. Increase by 50% will allow for 8 standard portions, aided by salad and bread as mentioned ;)

Cooking double of that will require industrial sized pots and pans :p
